I’ve been meaning to share this recipe for ages now. We all need a go to dinner the kids just love, right? Well this is my one. It’s a super easy, super quick pasta dinner that Aidan and Sarah would actually eat every single day if I let them! It’s easy red pesto pasta, perfect if you’re in a hurry.
So we call this one Pesto Pasta in our house and it should take you no longer than 20 minutes from start to the table. It’s gorgeous with big crusty bread rolls if you’re really feeling the love for the carbs!
Easy red pesto pasta Ingredients (Serves 4):
300g of dried pasta
1 pack of smoked bacon medallions
4 tablespoons of creme fraiche
1 jar of red pesto
1 tin of chopped tomatoes
Sprinkle of dried chilli flakes (optional)
Cook your pasta as normal. Chop the bacon in to small squares and fry in oil in a separate pot. Drain the fat from the bacon. Once the bacon is cooked add in the full tin of tomatoes, the creme fraiche and the full jar of red pesto. You can also add the chilli flakes if you want to add a bit of spice to the dish. Bring to the boil and simmer for just five minutes or less if you’re in a hurry. Once the pasta is cooked, drain and pour over the bacon and pesto sauce. Stir and simply serve.
Yes, it really is as easy as this. My kids are terrible for vegetables but this is such a versatile dish you could add mixed pepper, onion or even add in some chicken and it would still be as delicious. Oh and it’s also amazing with chorizo instead of bacon.
